I plan on trying to make ricotta cheese at home.

I plan on buying some rennet tablets from Danlac and trying my hand at 30 minute mozzarella.

Anyone want to help?

Are you going to make one enormous batch, and then need assistance in portioning it into smaller blocks....or even slices?

The mozza looks more labour intensive. If I was doing ricotta in a group, I'd probably encourage people to make their own batches. I'll probably do a trial batch of ricotta sometime over the next two weeks and then see if I can get some people together to do it (maybe after I have a new fireplace).

Oh, and ricotta doesn't come in blocks - it's more like cottage cheese.

You know, you do kind of cut them into squares during the process. I think it still turns out to be more like curds, but more will be discovered by experimentation.

We did that a couple weeks ago. Our ricotta flopped but the mozzarella was tasty.
